How Ingredients Build Structure in Alcohol-Free Drinks

Reading an ingredient list seems like it should tell you what a drink will taste like.

If you see blackberry, plum, cocoa nib and eucalyptus, you start imagining those flavors. Raspberry, hibiscus, stone fruit and citrus peel create a different picture. But ingredients don't always translate that neatly into what we experience in the glass.

This is particularly true in alcohol-free and wine-adjacent drinks, where ingredients may be chosen not only for their flavor, but for the role they play in the finished drink.

An ingredient might contribute acidity, bitterness, aroma or texture. It might make fruit seem brighter or sweetness less noticeable. It can add something savory, extend the finish or give the drink more weight on the palate. Sometimes an ingredient is doing exactly what it was intended to do when you can barely identify it at all.

How We Experience Flavor

Wine offers a useful way to think about this.

When we taste wine, we don't experience fruit, acidity, tannin, aroma and texture independently. They arrive together and affect one another. Acidity can make fruit seem fresher. Tannin provides shape and texture. Aroma influences what we perceive as flavor. The finish determines what remains after the wine leaves the palate.

Most of the time, we experience the whole before we begin separating it into individual parts.

That same principle can be applied when creating an alcohol-free drink, even though the production methods and ingredients may be completely different.

What Verjus Brings to an Alcohol-Free Drink

Verjus is the juice of wine grapes harvested before they fully ripen. Its natural acidity can provide the brightness and structure that help a drink work particularly well with food.

Unlike dealcoholized wine, a verjus-based drink doesn't begin as fermented wine and then have its alcohol removed. The structure has to be built from the beginning.

In Faux, verjus provides that acidic foundation. Wine grapes, fruit and botanicals are then layered around it to create flavor, aroma, texture and balance.

Why Use Botanicals?

Botanicals are often associated with their most recognizable flavors, but their role can be much subtler.

A botanical can introduce bitterness or a savory quality. It can change the aroma of a drink without becoming an obvious flavor on the palate. It can temper fruit or create contrast. Used carefully, botanicals can help create complexity without making a drink taste overtly botanical.

This is one reason a long ingredient list doesn't necessarily mean you'll taste a long list of individual flavors.

The ingredients are there to interact.

Building Structure Without Alcohol

Alcohol plays a structural role in wine. It affects body, texture, aroma and the way flavor is carried across the palate.

When you're creating a drink without alcohol, those elements still matter. Acidity becomes especially important, but so do bitterness, texture, aroma and length.

The goal isn't necessarily to recreate what alcohol does. It's to build a drink that feels complete without it.

That means asking many of the same questions you might ask when tasting wine. Is there enough acidity? Is the fruit balanced? Is there something savory underneath it? Does the drink have weight and texture? Does the flavor disappear immediately, or does it linger?

And ultimately, do you want another sip?

More Than an Ingredient List

An ingredient list tells you what's in a bottle. It can't completely tell you what those ingredients are doing once they're together.

That's where formulation becomes less about assembling flavors and more about balance. Fruit, acidity, bitterness, aroma, texture and savory elements begin to affect one another until the individual ingredients become less important than the finished glass.

Sometimes the ingredient you notice least is doing some of the most important work.
