Like the other wines in the collection, this one is also very well-balanced in notes and how they progress from red fruits to ripe grapes. Look up safflower in its different variations and uses -literally, for hundreds of years- and you'll better understand why this is a sophisticated blend for a wine without the alcohol content. I did the traditional thing of testing it with red meats and red sauce pasta, and it holds very well with both, but it is also very good for chicken dishes. If you enjoy super-spicy foods, maybe those are a bit much for the delicate bouquet in this one, IMO.
